The seals on the thermostats are very important, and the radiator cap is also very important especially on a CAT, if it does not hold preasure it will suck in air.
Go to the Diesel Garage site and search handy links for the complete and proper way to bottle test an engine in a class eight.
I know it is the proper way, all that is needed is a clear plastic bottle and I recomend a cheap Infrared temp gun. It is a great write up, I wrote it!

best way to flush is to use cascade dish washing in water run truck tell tstats open drain and fluch twice with water after that if its really bad do the cascade twice

I just did T-stats in a C15 Pete doing that. When I pulled them out, the seals were installed wrong (bent up a bit), you can see the scores on the T-stats. It made them hard to move, so I assume they were sticking and it took more temp change to get them to move in the tight seals.

I like to check them with a heat gun before I pull them out of the housing. A good set will open smooth ans slow. The ones I took out got to about 200 degrees (using an infrared temp probe) then just popped open, then didn't close until about 145 degrees then they jerked shut. Basically sticking seals was the issue.

thanks sounds like the problem I think I did bend one a little it gets to 190 and seems like the open and it cools down quick to 180 and move back up to 190
