Thanks for your kind words y'all. I'm just a freak for good food and cooking. If you apply yourself and invest in your eating habits then you too can have a great set up. It's still a work in progress but its getting to where I need it. I've decided to cook outside to avoid all of the smells the cooked food can create. Although the cooking pan I have has a glass lid it cooks faster when the lid is on. I have a Centramatic APU so I have a good surface to work on.
Im not sure why you can't hardware this thing to your truck AZS. I'm not great at fooling with electrics so I got somebody I know do it. You can chop up an extra DC cigar lighter cord and use that. I asked for an extra one.
if you use an inverter just make sure it's got the required power rating. My inverter is a pure sine 1500 watts but you can use one that's a lot smaller. A 500 watt should be adequate

Probably the best investment I have made would be a microwave and an appropriate inverter to power it..paid for itself in a short time..but a little bit of hard earned advice; have the inverter installed by a pro..most companys that allow inverters will also install them in there shops..I did it myself and nearly burned the truck down when the insulation wore down and shorted out the pos wire...good luck!

I'm about to order my husband one of the lunchbox cookers. What in you alls opinion is the best? Roadpro or Koolatron?
Also, are all the lunchbox cookers generall the same size? I want to suprise him when he comes back home on Saturday. If I order today I can have it by tommorrow. Thanks in advance. -
We have there RoadPro... It works for us well, and the alum loaf tins fit.

Thanks for the replies. My instincts were correct. I ordered him the Roadpro and I also ordered him a hot pot so he could have hot water when he needs it for coffee, etc.

Not sure if this was said or not but I'll share anyway. Get a pressure cooker and learn how to can/bottle foods. I bottle lots of things in mason jars. Chili, homemade soup, stews, pastas, chicken broccoli casserole, fish, meat, jams, etc. They take up little storage space (pint size or 1 liter jars) and are ready to eat. Just open the jar and microwave, and you've got a hot home cooked meal. Anything canned can be eaten cold as well. The best part, it Doesn't need to be stored in a fridge, a cupboard is fine and it lasts forever! I've eaten canned moose meat that's 3 years old and was still fresh as ever!

I use a 2 burner Coleman cook stove and I have a small grill. Both take those Coleman 1 lb. cylinders. I either set them up out on the catwalk or on a little folding stand. A lot of rest areas have picnic tables you can set up on. I also use a DC inverter and a regular small home microwave and drip coffee maker in the truck. I make most of my coffee with a regular old percolator on the Coleman stove when weather is fit and I have time.
Camp Chef has a real neat propane cook stove with a nice big oven, Can see on Sportsman's Guide online store for about 200. That will be my next investment. Be cookin' up vittles just like at home.
I have an accessory hose that I can hook my stove and grill to a 20 lb. cylinder. Been going to weld me up a rack for the tank so I can mount it on the catwalk behind the cab.
