... not something I'd recommend if you are with an OTR gig. I did meet a new driver that in one breath stated with pride that he "put his foot down" and refused to run anywhere east of the Mississippi, then in the next breath complained his paychecks were small and he was only averaging 1800 miles a week.
Go figure...

I just can't imagine it in practice. I run on a tight schedule most of the time. Rare would be the day when I had the time to set up an outdoor kitchen and go at it. I pack a cooler with all my food for the week. I'm home on weekends. I take pyrex containers with leftovers of whatever excellent food my wife cooked over the weekend. This week it was roasted chicken, potatoes, green beans and gravy. I love pork, sauerkraut and potatoes, ground nut stew (pieces of chicken in a hot peanut butter sauce) over rice. I also take cold foods like a pasta salad, egg salad or kidney bean salad. You just put the pyrex bowl in the 12 volt Burton oven, put a little water in the oven to generate steam, and 20 minutes later piping hot. My bet is you would use that fancy kitchen about twice a month.

I have been looking at toaster ovens. I think it would make a great addition as I could make homestyle bakes which are cheap easy prep and actually pretty good. But my concern is whether or not an 1800 watt inverter coould handle a toaster oven.

I doubt a 1800 watt inverter will handle a toaster oven. If it does then it will be lacking in power and won't work as effectively, or it will just blow. I use a 1500 watt pure sine inverter for my electric skillet and uses every ounce of power to full capacity. You might have to go at least 2500watts or more for it to work properly.

Well it might, it's sometimes difficult to figure out if it will but when you use the toaster part,then it will really crank up the energy. I'm having a problem with a power strip running from my APU which has a 6000 watt generator. Despite that, my darn strip keeps popping when I use more than one appliance ie electric kettle and microwave at once so it's the strip that can't take it.
I did look at our toaster oven at home and I agree with you, it might work as it only needs about 1500 watts. But I think the crucial part of it is how much current does it need. I'm not a whiz on electrics but I'm always fascinated by currents vs volts. Quality of inverters could have an impact too.
