cooking in the truck

    Other than husband and wife teams where do you find the time to cook if you are "making " miles? I do nuke some home made food. Often bring cooked Chicken breasts and 2 fresh salads. When they are gone I buy a salad and top it with the CB's. But to cook something from scratch. I do not have the time. I make my own sandwiches and sometimes buy those Hormel meals and add a veggie.

    You have to take a ten hour break. Unless you need ten hours of sleep every night you have time to cook.

    No i don't make a full meal from scratch. Instant taters and a small canned veggie with a grilled meat is my staple for dinner. But tacos, burritos, occasionally hamburger helper if I have milk fills out my menu. All takeless than 30min to cook.

    Anyone who makes the excuse they don't have time to cook is to me not motivated to do so. I can make a meal from scratch, with veges, fully cooked, hot in around 30-40 mins. Many guys just can't be bothered to do it. That's ok, it's your funeral. I've been cooking consistently for years with plenty of time on the clock.
    I had Cajun seasoned salmon, sautéed with fresh peppers and broccoli with an avocado salad to start. All done very quickly. By myself on the truck.
    Obesity is out of control together with type 2 diabetes. So you've got "time" to acquire those conditions haven't you ?
    People never run out of reasons or excuses why they can't do this or that. Time to wake up guys and stop thinking it's ok to be vastly overweight. You just need good food habits to stay healthy.

    I've made curry chicken and rice, and chicken fried rice. I also do bacon eggs and biscuits if I have the stuff for it. I also keep a lot of canned food stuff as well.

    A crock pot is your friend... Set it, and let it go all day, then it's ready when you park at night... Clean up, and set it up for the next day... Sleep, turn it on and drive... Repeat...

    +1. Mmmm. Simple and second to none.

    Nothing makes me feel like a king more than sitting down to a meal of pot roast, baby carrots, and red new potatoes. Not to mention the delicious sandwiches to follow tomorrow...

    I'm hungry again.

    On the other hand crock pots can lead to distracted driving...

    I frequently work 14 hour days. During breaks in the middle of the day I can make a sandwich. However, my 10 hour break isn't just for sleeping.

    Once I get the truck safely parked I do my end of day paperwork, check emails, text messages, etc. If I'm at a truck stop where I can get a shower, then I have to squeeze that in too. I like to get a good 7 hours of sleep and then get up in time to eat breakfast and start my day.

    So the reality is that I really only have about 2-3 hours of free time. So making meals from scratch is not practical on a regular basis for me. Making some ahead and taking them along to heat up in the lunch box stove is about the best I can do.

    No excuses, just reality.

    With a microwave and a Foreman grill I can cook, and eat a steak, pork chop, or lemon pepper chicken dinner in thirty minutes. I am not knocking those that can afford to eat at the restaurant 1-3 times a day. But, the food I can make in about ten minutes usually tastes better and I save roughly $200-$400 a month by doing so. That's two of my car payments.
