You honestly dont need any special training if you know how to drive a truck. Start tomorrow looking how other people are strapping/chaining/tarping there loads. there are some good videos on youtube that are very helpful on this sort of thing also the dot manuals show requirements for certain loads and then theres common sense. you cant ever secure a load too well keep that in mind.

IMHO, where you (me too) live, reefer pays good and lane are strong, so youll have a whole lot better chance getting a dedicated run..
whats more important to you flatbed or the dedicated lane ? -
