    You do not need meat protein. That is a myth. In fact we consume too much animal protein.

    If you can install a strong power inverter, you can use an eletric pot. Or you can use a slow cooker if that works well in your outlets and it cooks while you drive.
    Or you can do like I do, after trying everything, now I use a propane gas burner and that always works fine. I set it on the floor and monitor it the whole time. Have a very thin piece of plywood I put it on the bed and that becomes my kitchen table.
    I used to cook brown rice but it takes 45 mins to cook and the steam gets everything damp in the truck... :biggrin_25513:
    So now I use precooked rice, like Uncle Ben's... it's not as healthy as dry rice... but for now I have no other choice. I use fresh garlic and onions everytime I cook, a little bit of olive oil, fresh vegetables, spices and herbs, let it cook a little, then I add the rice and beans (can beans) and toffu (for the protein). Sometimes I cook pasta and spaghetti, which I love! Don't have microwave or toaster...

    Cooking takes about 1 hr total or a little less. After that I wipe everything clean with paper towel or rinse it with water that I carry.

    It's very good and cheap to have a healthy warm meal in the truck. :biggrin_25519:

    I may not be the best person here to give tips on food preparation for my cooking is very simple and basic cause I don't like cooking at all. I know there are lots of tips in this forum about cooking healthy in the truck.
    Anyway, I set my "kitchen table" on my bed and my pot on the floor right in front of me. Then I cut and slice all the fresh vegetables. Start with a little bit of oil in the pan, some fresh onions and garlic, let it cook for a couple of mins, then throw the vegetables in the pot, add little bit of drinking water, let it cook for a little while, then add spices, herbs, salt, pepper and when they are almost done, I add Uncle Ben's rice and a can of beans. I cook everything in one big pot to save time and space. But just bought a "stove" (it's like a box that you plug in the cigarret lighter) and will start cooking real brown rice while I drive. Will put a layer of rice, a layer of vegetables, some oil, water, spices, salt and let if cook while I drive. I carry a gallon of drinking water (for drinking and cooking) and another of tap water for rinsing. Use paper towel to wipe things clean after cooking. The left overs I put in tupperwares after cold and put them in the cooler. I also prepare fresh raw salads (fruits and vegetables) and sandwiches to eat while I drive.

    We started using a stove box too, its great. Best way seems to be to use a tinfoil takeout tray inside it, make up the meal inside the tray, put it in the cooker, and then eat from it. Any leftover can stay in the tray to go in the fridge.
    Saves cleaning the stove box as well, it just needs a quick wipe when cool, and its ready to go again.

    Whenever I buy industrialized/ processsed/ pre-made food, I read the ingredients and avoid anything that has sugar, artificial colors, and too many chemicals that I don't know and don't want in my body... A couple days ago bought a cup of ice cream chocolate flavor that I love! The ingredients seemed fine but 30 mins after I ate it, started feeling sick.... pretty nausiated, had chills on my left arm.... :biggrin_2556: I have had this ice cream before but never had this problem... So I knew there was something bad in that ice cream this time... So, 3 hrs later I threw up and got everything out of my system. Immediately started feeling better. Eventhough the company that makes the ice cream claims to aply strict quality control, this cup was evidently contaminated with something bad. I had bought 3 cups, but will throw everything away... and will not buy it any more... Will stick with fresh natural fruits instead.

    You get a lot of protein in veggies well more protein then what you can get in meat.

    The facts are that people have been and continue to be healthy when they eat meat, or eat vegetarian. However, people don't NEED meat. It's purely a lifestyle choice.
