I tend to concentrate my carbs, if anything on fresh fruits, such as strawberries, raspberries, blueberries and pineapple all fresh of course. A good source of natural fructose and fiber. No, I'm not scared of sugar when applied accordingly. How can you go wrong with fresh fruit ?
What I do is something that I've built up over the years and I decided to go for it, in order to never worry about my diet/lifestyle.
Therefore I have a plan. Wherever I am I know where all the best supermarkets are and I shop at Costco too, to buy my stuff.
I have on my truck the biggest fridge I can possibly manage. In addition I have a 2 cuft deep freeze which is AC/DC so I can carry stuff such as wild salmon, beef, sausage, bacon. and deli meats. Quality of food is a very big deal to me.
On my fridge you will find at least 4 kinds of cheese, fruits, veges, tomatoes, avocado, milk, cream, pesto to name a few. I also use a lot of olive oil and balsamic vinegar. Butter too.
It's funny you should ask about bread because, yes, I love bread, but I rarely eat it now. maybe when I'm home, my wife will make it out of our bread machine. But I restrict myself to a slice a day.
Canned tuna should be a good addition although I'm just not a fan of canned anything. However, I think you can buy canned wild Alaskan salmon which sounds very appealing. I haven't eaten canned tuna in a very long time, but if it works for you, then go for it. It's an excellent protein food to eat on the road. You could mix it with avocado for instance.
Your choice of bread is good too together with the fruits and veges. Good deal. I drink nothing but Perrier because I love the fizzy stuff so water is the best way over sodas. Even fruit juices can elevate your sugar in diet and should be kept to a minimum.
I'm very fortunate, that with what I do, I don't have to eat processed food. It's a choice and I will concede that my diet/lifestyle is not for everyone.
I cook on my truck and I do have some cooking experience. My APU lets me cook some delicious meals everyday and it works out to be much cheaper too.
I'm 61 so I'm cognizant of my health and how I eat. It gets harder every year. Younger folks don't realize that once you get passed 50 all hell can break loose and your health can suffer through aging. I eat very well, it works for me and as a consequence I don't take any meds and have no ailments.
I'm happy about that.
So why would I listen to so called Govt guidelines or from people who have no clue, or no interest in my general health.
You will find, as I did that you chart your own course on diet and don't believe the lies and propaganda dished up by the food industry and media.

The sugars and carbohydrates in fresh fruit and vegetables are more complex (more variety) and are bonded with the fiber in a way that requires your body to break them down to use them. It's what your digestive tract and the bacteria in your gut were designed to do. Drinking fruit juice defeats that by eliminating the fiber, which is a necessary component of your diet.
I've been getting by with a small cooler only, no reefer. I restock it with fresh produce and yoghurt a couple of times a week, which keeps everything very fresh.
At first as I was going through this diet change I ate canned chicken, tuna, or sardines at least once a day. Now that's dialed back to once a week or so. Seems like animal based protein isn't as appealing to me as it once was, although I really enjoy a good steak every couple of weeks or so. I do eat hard boiled eggs, maybe one a day on average (maybe a little less depending on if I'm at a Flying J or not).
I've taken to adding a splash of apple cider vinegar to my water bottle, and that's quite satisfying. Far better than soda pop or sugary sports drinks. I might add a bit of raw honey, but I've backed off of that.
As far as bread, I eat maybe one slice a day. Mostly it is a "sop" to soak up olive oil and balsamic vinegar after I've finished my salad.
Since almost nothing I eat in the truck requires cooking, clean up after a meal is simply wiping down the salad bowl and stowing it away.
My "go to" breakfast now is fresh organic blueberries in plain yoghurt. If I can find cacao nibs I'll add some of them.The Mariachi Thanks this. -
I can understand the mindset on animal protein, it's down to personal choice. As a change when I'm a little hungry especially towards the end of the day, I eat some salted nuts, inc macadamia, almonds, cashews. Yes, I'm not afraid of salt either. But I'm no match for my wife.
Nuts are not cheap, so I usually buy the large container of mixed nuts at Costco which are really good and can fill you up. There are some good natural oils and fatty acids, as you know, in nuts especially macadamias.
And they provide a good secondary source of protein. -
Don't get me wrong, I like to be a carnivore. It's just that as I've started eating the bulk of my food in the form of fresh, raw produce, I've had less craving for meat. It wasn't any kind of animal rights choice or anything like that. One day I realized as I was shopping and went by the canned meat section that I didn't need to buy anything, because I hadn't eaten anything since the last time I stocked up. After a while I bypass the section most of the time. I DO get a hankering for some good steak now and then, and if I can find a good ribeye in a restaurant I'll treat myself every now and then.
One thing I do now when I eat meat is I don't have any starch with it. Maybe a salad, but more often than not I just eat the meat by itself. Much easier to digest. -
Eating fresh food as you mentioned Dr is probably better than canned anything. I need to focus more on fruits for carbs since I rely too much on bread.

I can understand your dilemma and that was the hardest part for me......stop eating bread despite having a love affair with it. Fresh anything is a better option than canned food.
I had to laugh last week. There's this chick on TV trying to convince us in a commercial that you can make nutritious dishes with canned food. I think she's dreaming. Spam casserole.....Yeah right!!
They must be desperate and maybe canned food sales are dipping.
The challenge is to be able to buy fresh produce on a consistent basis while OTR. And then be able to store it.
Takes time and a plan.

Ill disagree with you there and say that the sugar in fruit has the same effect on your insulin as any other sugar. Hard boiled eggs are the food of champioins and IMO its worth spending the bucks for pastured eggs.

We may agree to disagree. However, I think if you do some research on the effects of fiber on the digestion of sugars you will find that fiber is the key to breaking down sugars over a longer period of time, through a greater range of your gut (on into your large intestine), and will do far less to spike insulin than refined sugar. Refined sugar is divorced from fiber and has no chance to take a long time to absorb into your system. Fruit juices will spike your insulin response similar to eating products with refined sugar for the same reason.

Yes and my gut inside is having one heck of a party. There could be an argument about fresh fruits elevating blood sugars but let me know of anyone who has got type 2 diabetes because they ate too much fresh fruits!! Or become obese !!
It would be interesting to see the structural differences and makeup of fructose in fruits as opposed to the composition of HFCS. I suspect it's vastly different.
I also believe the FDA is being discrimatory towards certain foods. I for one would like the freedom of choice to buy unpasteurized milk, for instance which is banned in many states.
But these clowns in turn let poisonous and toxic pesticides be sprayed on our crops. But that's the Govt for you.
No doubt about it, we need naturally occurring bacteria to function and be healthy.
I can buy cheese made from unpasteurized milk and unfortunately the FDA creates too much hysteria towards this situation. Also, there is no need to buy and consume pasteurized eggs.
A better option IMHO is free range/ organic eggs. Letting chickens eat freely on the farm and they can produce eggs very quickly.
We just need to eat foods which are as natural as possible and to stop these big corporations having control over our food choices. With them it's all about greed and profit.Lepton1 and The Mariachi Thank this.
