Same thing you'd do while driving a car. If you take a hit it'll do the same thing to an 80K pound truck as any thing else that isn't anchored to the ground.
If you see one but aren't in imminent danger, call 911 and report it.

Make sure you speak clearly when trying to outrun it and screaming the whole time, me personally, I want to hear the shear terror in your voice, for that you won't need to hold the phone sideways.

OK, ok,now seriously here, this guy is asking for guidance and all you can give him is sarcasm???
OP, next exit, find the elevator, yeah the place that takes grain from the hopper bottems. Put yourself on the opposite side of the elevator than the twister. You will be sheltered from debris and wind. Other than stopping and seeing which way the beast is headed, then you need to take cover. Don't EVER count on outrunning it.
