I have no appliances in my truck. Easy enough to stop at grocery store and get veggies and fruit every 3-4 days. Most veggies and some fruit will last 4 days easy until peeled. Melons you need to eat as soon as you open them. I don't cook in the truck. I do carry MRE's for a change from raw food. Also I carry canned fruit and veggies, soups and what I want. Most the time I just eat them room temperature.
I DON'T think it looks ridiculous running around a truck. I usually go for fasted paced walks. Exercise is healthy in any form.

I've thought of starting to go on 30 min walks each night but haven't gotten motivated enough to do it yet.

I'll eat the burger without the bun, then go for a walk.

Start easy. Go for a 10 minute walk. I started parking as far from building as possible. Then I would make multiple walks back and forth from truckstop. (just so I wouldn't look ridiculous) haha. Then it was 10 minute walks 3 times a day and now 30 minutes some times each time but always a total of 30 minutes a day. It's easy once you get started.
And I'll be damxed if I'm going to let someone else shame me out of my exersize because " they" think it looks funny.
I think they look funny being all fat and jiggly waddling in their sweat pants.

Yup. Motivation (or lack thereof) is key. I've found that first thing in the morning or even mid-afternoon is what works for me. By the time evening rolls around I'm tired, and a workout sort of gets me going, and makes it tough for me to sleep. No reason that 30 minutes can't be broken up into two 15 minute sessions. Maybe a brisk 15 minute walk before pre-trip and another during your mid-day 30? I dunno, just a thought. But finding the motivation is key. And any exercise is better than none.

Listen to me, I sound like a fitness pro. Far from it. I'm just sort of rambling, and convincing myself as much as anything. :) Take my 2 cents for what it's worth (about 2 cents :)).

You could also jump to conclusions, drag your ###, push your luck and lift your spirits for exercise.

Easiest way to get in some walking...park at the furthest back corner of the parking lot...
and walk to the bathroom when you need to use it. The pee lot is appropriately named......
I've also seen guys jumping rope, that's a great exercise.
