I don't know if it's practical, I have never converted one. I guess practical is relative to the person. A wild guess is that you'll have 10-15K invested in it by the time it's done. What ever it costs, you have to decide whether or not it's worth it to do.
Me personally, I would invest in getting your drum brakes in perfect working order, then plan on getting disks when you decide that it's time to replace your trailer. If you're having brake adjustment issues, there is something wrong. If brake fade is an issue, long stroke chambers with Bendix slacks do better for severe duty braking. Haldex and Meritor adjust a little quicker, which may not be good if it adjusts out extra clearance from drums expanded due to heat. It can make the brakes tight when they cool. For those applications, Bendix adjusts a little slower and the long stroke chambers help with brake fade with the larger clearance. Hadex and Meritor slacks work great for typical applications, just not as well as Bendix for severe service.
Don't get me wrong, I like disc brakes and we spec all of our new equipment with them. But that doesn't make drum brakes unsafe, we still have plenty of them in our fleet. I find it hard to believe that it's worth the cost to convert, but it's your choice.
