Keep an air pressure gauge and a glad hand tire inflation hose. I will not run without those two items. Also electrical repair kit and a good multi tool to start off with. A hammer/ax is also something I won't drive without.
This stuff should be acquired and put in the truck as soon as you have the chance.

When it comes to the mechanical stuff, that depends heavily on what your company wants you touching on the truck. Simple things like replacement bulbs and glad hand rubbers are one thing, but some companies don't want you touching things under the hood unless you are a certified mechanic.
Gone are the days of simple mechanical engines. Everything is controlled by a computer and unless you have the training, I wouldn't recommend playing around with things. Just keep spare fluids, replacement parts and the necessary tools for replacing them.
As for food and personal stuff, that's entirely up to you. It's best, especially in the winter, to have several days of extra clothes, LOTS of extra food that doesn't require refrigeration and enough winter gear to survive in the cold. Not saying it will ever happen, but better to have and not need, then need and not have. -
