    I always keep sandwhich meat, and also I love tuna sandwhiches. They have these tuna packs that are perfect for one sandwhich no can just a pouch for you to put some mayo in mix up and put on the bread. Also I keep lots of pudding, pickles, string cheese, and lipton raspberry tea.

    For me, I love to eat pizza when I drive, now I don't drive a big rig, but pizza on the road is the best

    Hubby has an inverter in his truck. I bought him a llittle single burner from K-Mart for $20 and he heats up and eats soups and all sorts of stuff in a little pan. When he unplugs the burner, it cools off quickly. It's about the best thing I've managed to get for him - he uses it a lot!

    He'll just take the pan in with him when he showers and wash it out. He eats the soups right from the pan so that he doesn't have dishes to do other than that pan and a spoon. It's much healthier than a lot of stuff you can get on the road!

    I have a fridge and microwave...

    Eggs in the am - I keep cheese, salsa, jalapenos for variety. Veggies, fruit, chili, soups, tuna. Since there is a separate freezer in my fridge - microwave dinners, chicken tenders, fish filets, frozen veggies.

    Pull a storage cabinet, and put the fridge in. Bungee the microwave to another storage cabinet. Fridges don't pull much power from the inverter, but the microwaves do. Keep it as low a power unit as possible, and it's best to idle the engine when using it.

    whatever you eat please please please make sure you look at the amount of sodium you're taking in.

    anything in a can is gonna be absolutely LOADED in sodium, taking in too much sodium (salt) will slowly kill you, causing hypertension, which can cause heart attacks and strokes.

    here's an example of how much sodium you would take in eating these:

    - A McDonald's Quarter Pounder with Cheese: 1,190 milligrams (mg) of sodium;
    - One Wendy's Chicken BLT salad with no dressing: 1,280 mg;
    - Salad dressing for the salad: 330 mg; and
    - A half-cup serving of canned green beans: 400 mg of sodium.

    your daily intake should be between 1000-3000 mg, anyone with hypertension shouldn't take in more than 1500, now look at the example above, just 1 quarter pounder with cheese will load you with #### near all the sodium you should have that day (if you have hypertension which 65 million people do, not all know about it).

    i can imagine how hard it must be to eat right on the road, but remember this: Fat and calories will cause health problems and weight issues (which will contribute to many diseases) but the Sodium is an absolute KILLER, literally.

    so for me (when i get on the road), it'll be ZERO processed foods, anything in a can will have to have the minimum possible sodium.

    next time you buy that canned food please turn it over and look at the nutritional values printed on the back. it might look good only having a few calories and low saturated fat but it has 890 mg of sodium for only a HALF CUP serving. that means just this 1 can of soup while only having 220 calories (great right?) has 1780 mg of sodium ... that means if you had only 1 can of soup all day and NOTHING ELSE you already took in too much.

    Stay safe out there and watch your health please =)
