That may veryu well be a plan, I don't know if you are familiar with Odessa or not, but when the boom is over, that same place might bring 50,000. lol
I would check in to permits before I got too serious about something like that, boom towns have a habit of (really forced to) stop issueing any sort of permits for things like that, and water too in many areas. -

Maximize your potential?
Really dude, you are going to be a driver so what ever you do other than keeping a clean driving record isn't important at this time which you will understand what i mean when you get to the fleet owner thing.
Two good rules to live by.
One is forget this idea of not driving in the future. It may be a goal to stay off the road but in truth you will drive sometimes.
Second is never ever work for family.
That said, take the local work, get some exercise and enjoy a bed every night that is your own. -
Have fun in Wyoming. It's not so bad. I've been in oil for a decade.

I would definitely go food service. But make sure to get a good chiropractor and do good stretching before your shifts because that work can murder people's back
