That's me and Chelsea's favorite restaurant, we either go to Texas de Brazil or Fogo de chao.

Fantastic places for a meat lover.

The chef that I trained under (35 years ago) would loose his effing mind when an order would come in for something like a 40 day dry aged Wagu T- Bone well done. He'd throw a temper tantrum, slam stuff around in the kitchen, holler and finally he'd personally deliver the steak "to see the effing moron that wouldn't know the difference between a steak and boot sole".

We had a doctor, Dr John Austin that came in EVERY Friday evening for Prime Rib. He wanted a center cut piece well done. Chef Judd would get so enraged, he'd drown it in Au Jus, slap it in the microwave and just turn it into rubber. Dr always sent his compliments to the chef for a great meal and Chef would teach everyone in the kitchen new profanity. I finally started taking the center cut from the first roast out, vacuum bagging it and throwing it in the Sous Vide till the Drs order came in.

Every Saturday afternoon Chef would pick an item off the menu and prepare it for the entire dining room and kitchen staff. If you wanted to keep your job, you didn't dare sit down and go looking for any kind of sauce in a bottle.

He's probably the same guy that takes the seat off his bicycle and cruises around town looking for pot-holes.
