So if one goes to school, they’ll probably teach you about all sorts of engines, but I want to take a course or buy a manual/textbook to learn everything about the DD15 or Freightliner Cascadia. How would I go about this?

Guessing you have this particular engine. I can't help with that; but:
A - Cat Dealers have repair manual on CD, check E-Bay to see if there is a less costly path to them.
B - Look on Youtube - search videos, i know there's a mechanic, "adept ape," that likes Cat stuff.
C - Also just Google search your engine; I did that and found my 3126 repair manual on a free site.
D - And the search bar on TTR gives you every post from anyone requesting help for issues on here.
E - I'm sure if you have a particular thing you want to know, someone on here's been there, done that.PE_T Thanks this. -
I'd check with a dealer too, you might be able to order service manuals and training material through them

Does anyone have the Detroit diagnostic link? Is it the real deal when it comes to service manuals, training, and so on?

Dtnaconnect is great.
It is free, you just have to sign up.
It is great for ordering parts because you gives you all the part numbers. On newer trucks like yours you can see all of the wiring diagrams.
They also have literature on the site.
