Okay so let's say I'm rolling along to a signal light in 9th gear..
The light is green and I'm making a left turn...
I engage both the brakes and clutch to slow down so I can shift into 5th... (I keep it in gear until I'm slow enough for 5th)
Am I causing harm to the clutch when I do this??
Am I making my turns wrong??

As long as your not engaging the clutch brake, your fine

I concur with Street beater, but would add that you don't necessarily need to hit the clutch until your rpms get low enough to require it. It will be less time with the clutch in.

Never skip a gear and you should be at the correct speed to make the turn without breaking during it
-
Good luck with that.

Whats wrong with skipping exactly?

Obviously if you have to you will/should, but it is not something you should plan to do unless you have to.
