I'll tell you what, aside from running us 191 through flaming gorge national park in wy-ut. Southeast ohio-wv-pa 2 lane back roads are not fun. I79 i77 & i70 corridor through Ohio. Off the interstate is where you will learn how to go down a hill.
I40 east of texas and hills in the same sentence really? Maybe near 81.
Op if your still on the high side with over 30k in the box your doing just fine for a new guy. Take the way with the most hills while you got some nice weather. Best time to learn is now -
just did I-15 to 40, 32000 in the box, 45 plus mph until the that one truck is moving at 10 mph and yah get stuck behind em due to the trail of trucks and traffic passing.

Now that you are eastbound on I-40, you can simply run to OKC and catch I-44 to St. Louis. Another option is to catch US-54 in Tucumcari, NM Northeast all the way to Wichita, then catch I-35 northeast to Kansas City and I-70. I have gone either way plenty of times.
If you run I-44 do yourself a favor and stop at the Petro in Joplin, MO for a 10 if it's in your schedule, at least a 30. The folks that own the I-80 truck stop in Iowa also own the Joplin Petro. Don't let your jaw hit the floor when you walk through the doors. -
