What should a 1994 Cat 5EK engine run for fuel pressure? Also, this truck does not have a pressure gauge. Is there a port somewhere i can test the fuel pressure?

Mine runs a tad over 75 but bounces around a lot... I believe there is a fuel port on the filter housing...
-
port is on the filter housing, its a cap you remove it and screw in your gauge, I generally shim pump to achieve 110 to 115 psi at 1800 rpm.

I think thats a 3/8 boss O-ring fitting

The older 5EK's use a larger pump with more volume compared to the newer pumps. Most of them run at 65-75 psi while cruising down the road. Be careful playing with these pumps, you can very easily raise pressure over 150-200psi before you know it. If you install the wrong check valve, you can raise pressure dramatically also

i have a 5ek and mine runs right at a 100 to 95 psi on a fresh filter and i will change it at when it drops to around 60psi
