Powered the small Fridge/Freezer as well Coffee Processing Unit preferably with Truck 4wird Power Unit engaged.
Coffee unit werked well till it stopped.
Went back to the questionably clean store taps.

Last year when Covid hit and the truck stops stopped letting us use our refillable mugs, I went to Walmart and got a K-cup coffee maker.
K-cups are cool. No mess to worry about.
I do need to use 2 to get the coffee right, but the cost is a bit better even so.
Many times the only thing I bought at a truck stop was coffee.
Now they don't even have that much.
The extra 5 minutes a day I spend making my own coffee is well worth it. -
You will probably have access to a 1500W inverter with an APU?
I would buy an electric hotplate and a saucepan to make coffee with. You can cook more with a saucepan than a coffee maker.
Make "cowboy coffee". Heat water in the saucepan and then add some coffee grounds. Put a paper towel over the lid of a coffee mug and pour the coffee from the saucepan into the mug to filter out the grinds.
