Salsas are really pretty easy to do. And a little ingredient adjustment makes em different. But the pepper is the star of the show.

I’m just gonna do a quick write up of one of the easiest ones I do. I take it on the road with me and keep it in my little fridge. Can’t tell you the shelf life because it never really lasts longer than a week or two because I put salsa on everything…and a lot of it.

Finished product, just like at the taco stand (just made a small batch, cuz I only had 3 jalapeños)

Ingredients (forgot to put salt in the picture).
Really all you need is jalapeños, oil, and salt.

I use avocado or olive oil, but most restaurants use vegetable oil. I like to throw some onion and garlic in there. Always salt, but sometimes I’ll throw pepper, or also cumin (cumin really stands out and can change the flavor profile). But, unlike this long overly complicated post, this salsa is as simple as jalapeños and oil.

You have to boil the jalapeños. They will turn a kinda “olive” green. That’s when they’re ready. I throw the onion and garlic in there too. And that’s pretty much the amount of onion garlic I use whether I put 3 or 6 jalapeños.

When ready, pull the stems off. I cut em up just to help them blend. Then throw everything and some salt in the blender, put some oil in. I don’t know if you can see the oil line, but I put in a little too much oil for this amount. I use one of those bullet blenders for this. Then, just blend the heII out of it.

Oil helps cut the heat out. So if it’s too spicy, add a little more oil - but there’s a fine line between just right, and too much oil.

Then that’s it! Spoon it, or squeeze bottle it over your favorite taco or burrito or whatever.

And easy to whip up and take on the road with you.

For those are dieting, salsas like this are great to have around to liven up mediocre food.

They make a habanero, but the diabla is more than hot enough.

And I basically live in northern Mexico, and married it.

    If I ain’t sweatin’, I ain’t eatin’.

And yes, those are latex gloves in the background. Call me what you will, but I have gone to the restroom after cutting peppers. Not pleasant. Lesson learned.

Made some tacos and used lettuce instead of tortillas…cuz I’m a fatty. Tryin’ to do the right thing.

And homemade tortillas made on the regular here, so it’s tough to quit em.
