If I might throw in my two cents... During nice weather, I carry a charcoal grill (small and is $15 at Wally World)... I'll grill food then throw it in fridge and just use the electric skillet, or in some cases the microwave, to reheat it.

As for the question of company driver that can't have a power inverter, look at propane/butane camping stoves. Been there, done that... Just remember to ventilate truck if cooking inside...

I have been back on the road for a little over 2 years and I can count on my fingers the number of times I've gone into a truck stop to eat, unless you count the steak and cheese sub from subway, to which that is my crack... Lol

I carry a milk crate full of spices, BBQ sauce, other cooking goodies, and cooking utensils...

It can be financially challenging to get started, but it WILL save you money. Furthermore, if you are a hard runner, it can be difficult to sit and cook after running hard for your 11 hours, walking/exercising for 1/2 hr to an hour, shower (which by the time you wait in line and get done, you've killed another hour), tidy up truck etc... Basically my point is time management and discipline is a must....

Other than that, I absolutely love my electric skillet :) enjoy

This is similar to the "Camp Stew" that I make. My version is as follow:

3-4lbs ground meat (usually store beef)
    3-4 cans various beans
3-4 cans tomatoes (stewed, diced, etc.)
    1 whole onion, diced
    2-3 bell peppers, diced
Other fresh vegetables added if on hand, diced
Spices to taste (oregeno, chives, italian, etc)

Brown all the meat in a large (the big ones that are at least 12-inches tall) pot, don't drain
    Add in all the vegetables
    Simmer for an hour
    Spice to taste

Serve as is, or add chilli powder for a tasty chilli instead of a stew.

It makes a lot of servings, so unless you're feeding a family, you've got a tasty stick-to-your-ribs-filling meal that should last around a week or so if packed in serving-sized tupperware bowls. Cost's about $25 total for the meal. Primarily for the meat.

Don't let it fool you, eat a bowl, then let it digest for a bit. You'll have trouble eating a second.
