2003 Freightliner Columbia series 60 12.7 as far as I can tell it's do to manifold pressure? My boost guage shows same boost as always is this do to bad manifold boost sensor? Check engine light comes on and off usually stays on under boost. Also coolant temp will drop to 0 then fan comes on then goes back to normal after check engine light turns off.

As far as boost goes first check charge air boots (both hot and cold sides) for holes, tears, thin spots or loose clamps (some clamped hoses are just factory "bands" that I've had to cut off and replace with a "proper" hose clamp. The coolant temp suggest an electrical issue, check wiring/harness up front by the fan area. Having the codes read properly would certainly shed light on all these issues.

No boost leaks I get 30 psi full throttle what's happening is as soon as coolant temperature crosses 175f check engine comes on oil pressure goes from 45 psi to 65 fan is on and on rare occasion it cuts the power. I get like 3-4 codes all pointing to temp, manifold pressure, fuel pressure , air charge temp and on rare occasion low oil pressure. To me it seems like a ECM issue even if there is a bad wire it would always cause an issue and not when temps starts to go above 175. I can cruise all day long without a problem coolant as long as temps stay under 175

And this happens only while driving I can idle until fans come on and no issues

Again without any specs it certainly sounds like your experiencing something electrical, and having the codes read would be my first starting point. On newer engines, 175* coolant temp is still on the cold side before thermostats open up, what is normal running temp?

I cant remember exactly but I think that means circuit voltage high or low.
    Maybe for an egr valve.
    Or barometric pressure sensor.
    Nothing major.

Today went to pick up a trailer and while bob tailing i get check engine light on coolant and oil pressure drops to 0 fan comes on but it runs normal. I get 5 codes

    ecu 128 pid 172 fail 03
    ecu 128 pid 174 fail 03
    ecu 128 pid 175 fail 03
    ecu 128 pid 110 fail 00
    5th code
    Ecu 128 pid 100 fail 00
    Just got another new code
    Ecu 128 pid 102 fail 03

forgot to write down the 5th one i checked wires took ecm off checked battery shows 3.6v. i took few days off to check all the grounds check pins to ecm check all cables again. Any one got any other suggestions? if i can't figure it out the only thing left is to send ECM for testing
