There were other guys in my orientation that had 9+ employers in their asked time frame (it was 10 or 15 years, I cant remember) and they were still accepted and hired same as me. You just need to be honest there.

Just fill in the gaps when you fill your app out, working under the table isn’t the issue, they are looking for you working as a driver under the fmcsa regs in order to fulfill their obligations.

A few things you can do that will make things a bit smoother.
Put together a job history list. Cover 10 years at minimum.
It does not matter what, just have all the information.
If it was cash or payroll, does not matter.
If the gaps of verifiable employment are large, see if you can get a letter from someone that can verify your situation. As an example, if you had been a care provider for a parent, go to the physician that was providing the medical care.
Go to the drivers license division and have an extended MVR run. Tell them it is for CDL.
This way you know what’s on that record.
You may also want to pull full credit reports.
A lot of companies do get summarizations as part of the background check.
While you might believe your records are clean, better to know for sure. Sometimes information that is NOT yours gets incorrectly entered. Better to find that now than later.
Last; if you can afford to pay out of pocket for CDL school, you will be in a better position than committing to a company contracted school.
Some companies have programs to pay back the cost. Will still take a year or more, you will not be held hostage like a contract.
