Going Vegan as OTR

    My plan is to eat lots of almonds and try to stop at a Walmart once or twice a week for fruits and vegetables. I have a refrigerator so I don't think it will be too hard. I shall also eat beans. Wish me luck.

    Any other trucking Vegans out there have advice?

    I found the pre diabetes diet worked really good for me went from 225 down to 185 in 4 months you can find it on the Internet and mostly all the same does have chicken and fish on it so if you're going vegan for personal reasons you could replace them it boils down to filling up on vegetables and some fruit with small servings of meat and 3 meals a day

    More variety is good. Eating healthy in a truck can be hard. Eating a healthy vegetarian/vegan diet can be hard. Combining them would take a lot of research and planning to be sure you do it correctly.

    Peanut butter stays good until I finish a jar.
    Celery, apples, radishes, most produce and citrus all will be good a couple days to a week.
    I have a 24 pack size cooler. I freeze when home and put in 6 frozen bottles of water. It keeps things cool. Just open once a day.
    Canned fruits and veggies are good. Vacuum packed food also will last without cooler.
    Don't forget your daily vitamin or the cinnamon.

    Yep. Your right.
    That's why when you go to the store it's called shopping not buying.haha.
    Really have to read labels to get the good stuff.
    Just like " Organic" not all of it is.

    My wife made up meals (3 per day) for a group vegans working in remote northern areas for a week. Only required refrigeration for the meals. Heating food was with microwave.
    It can be done and wife had excellent menu but you do have to plan ahead and hone your culinary skills. I'm not vegan but I was amazed how tasty the vittles were

    wash the heck out of your produce, they use so much preservatives on everything now you do not digest it properly and cut all high fructose corn syrup which is very addictive.

    Peanut butter will be a staple. Got my one a day vitamins as well. What are the benefits of cinnamon? I'm thinking about switching from coffee to tea as well, so that would be a good combo.

    Really looking to get healthy. My burger and taco days are over.
