Going Vegan as OTR

    We are meant to have meat but there's two problems with it today, 1 is the way the animals are raised. A lot of it just isn't healthy meat anymore and 2 is we've made meat the main course and veggies the side dish when it's supposed to be the other way around. Lol. Most of us don't even eat veggies. I still eat meat but I'm picky about where it comes from and I eat a lot more veggies. Lunch everyday is a salad made up of Romain and baby spinach with broccoli, cabbage, & cauliflower. I don't use any dressing on it either. That was a little but if an adjustment for me. One of these days I'll make my own and use it. Usually for dinner I'll have a small portion of meat with sauteed squash, zucchini, and mushrooms, asparagus as well.

    Lol ... well I can’t give everything in a short post... but my main two tips is; find things you like to eat and avoid SOY is possible (Especially Tofu) ...

    When my wife started then me, it was challenging at first because “what do we eat?”, but slowly we started finding and learning how to make food we like that was completely plant based. Once that routine is in place it just becomes second nature and normal to eat in a plant based fashion.

    My wife just made some awesome restaurant style black bean burgers with toasted bread, plant based cheese and toppings and stuff.

    But over the road, you can start with meals like this: spaghetti, couscous & mushrooms, bell pepper mushroom fajitas, soups & Cajun boiled p-nuts...

    Cajun boiled p-nuts are $2 a can at Walmart and can be cooked in minutes, just dump into the skillet and warm up. This is one of my go to lunch meals when OTR. Not the healthiest but sure beats a pig on a stick

    Then if you travel the same routes you can find places along your route like; Chipotle, Freebirds, ... and a fine choice for vegans over the road is INDIAN food/Buffets - as a lot of their culture is vegetarian... just got to watch for the butter

    Where do I find it and...

    Is it stringy like mozzarella?

    Cheesy like Colby?

    I can put it on my pasta substitute, spaghetti squash.

    Daiya cheese is pretty good, “Go Veggie” brand has a vegan option... then there’s more expensive ones like cashew cheese and almond cheese etc...

    To be honest after a while I lost my taste for cheese and meat substitute products all together. But my wife still likes it from time to time... so it’s nice to get plant based Mac n “cheese” Sometimes ...

    As far as texture, I don’t really know, I never really did eat much cheese before to differentiate the textures and what not

    I like spaghetti using veggie noodles. They actually taste better than pasta.

    I just read that vegetables don’t have the nutrients they used to have because they’re overfarmed, like they don’t rotate the crops enough and they don’t use the correct fertilizer and soil supplements.

    I hope I didn’t read it earlier in this thread

    Yea, so if vegetables don’t have the nutrients they used to have, what do you think the meats got? They feed the livestock gmo soy beans and corn.

    PS there is a small percentage of produce under the labels organic and/or non-gmo... that still holds more integrity... non gmo means, not genetically modified- meaning if you sprayed pesticide on it, it will die. Unlike conventional produce which is overfarmed and etc... but that’s another topic

    This is why local, sustainable, non gmo, organic etc. agriculture is so important. I know organic is sometimes misleading in the supermarket. But still, if you get it right 75% of the time, that’s a big deal.

    There IS a way to eat meat and produce that’s nutrient rich and healthy for you, the animal, the environment, the farmer, the local economy.... it just takes research, sacrifice, and determination. It starts with changing the way you think about what you chose to put in your mouth.

    I am for GMO’s and Monsanto, without them there’s no way we can feed 7 billion people.
