I took out the passenger seat and strapped it down there.

I once removed the mattress from the top bunk of a t680 and strapped a nice big dorm fridge into the corner up there.
Downside is that you never get to flip the bunk up
I think the best is taking out the passenger seat though

My suggestion is to measure before buying.

Last time I used a mini fridge it was a bigger unit with freezer separate. I removed the lower cabinet behind passenger seat, made a plywood platform, bolted it to the floor, and put hooks in the plywood for the bungees to hold the fridge in place.

I just put a 4.1 cubic foot on the top bunk of my t680. Problem with that in a freightliner. No top vents. So in the summer. It could burn out. Due to the heat.
