Healthy eating while on the road

    And for what 2 of those cooking liners cost you can get a roll of Bounty and Lysol disinfecting wipes and clean for a month or more.

    I have an electric cooking pot that I can fry in, boil, slow roast and when out in the middle of nowhere make a gallon of hot bath water to wash up with. I have yet to come up with something I can't cook in it.

    Just last night I browned 4 chicken breast strips then shredded them, added a can of drained white hominy, can of drained chopped green chillies, can of salsa verde, can of Rotel mild and enough low sodium chicken broth to make it a soup. Let that heat through for an hour and get happy then had something great for dinner with enough left overs for another. Yes a little higher in sodium than I care for but a lot higher in nutrition and flavor than anything from inside the Love's I'm parked at, all for about $3.75.

    I had a gastric bypass about 18 months ago (before becoming a truck driver), so I'm not able to eat at most fast food places. I bring protein powder/meal replacement shake mix along with enough Vitamin Water Zero Rise to last about a week (2 shakes a day). I also bring enough bananas and oranges to last about a week, and then beg my trainer/teammate to stop at a Walmart or grocery store to restock as necessary. I'm trying to stay away from junk foods, but a bag of chips or candy bar is a lot quicker than waiting in line at Subway most of the time. Hoping to get some type of refrigerator setup once I get into my own truck so I can expand my food selections while on the truck.

    Worth every penny. Tell us more about the electric cooker. Nutrition and good food are critical to me.

    It's just an electric cooking pot from Walmart. I think I paid $25 for it a couple years ago. I'm at the Tulalip seafood buffet tonight killing the king crab but when I get back to the truck I'll take a picture of it.

    It's a Presto brand, I think it's 5 quarts or something like that. Comes with a Pasta basket which hit the first dumpster because I have no desire to boil a cheap aluminum basket.

    How about eating while with a trainer? I see that SGIT touched on the subject briefly above. As odd as it may sound, it's one of my concerns. I'm a heathy eater on a daily basis, and "feel it" if I have a cheat day. Not sure how well a trainer would take it if I needed to stop every hour after eating with him/her at a TS (or similar). I realize the truck is their home and I will be a guest, and space is limited. Just wondering what your thoughts and experience are. Thanks for all the great info...learning a lot here.

    In my case, it was pretty difficult because my trainer wanted to be rolling 24x7 and didn't want to stop at Walmart or a grocery store. He finally lightened up a bit after the first couple of weeks on the road and I had more opportunities to eat a little better than a bag of chips and a candy bar.
