Job offer dedicated LA to Sea ( back and forth in five days)
I am concerned with North end of Califprnia and Mid Oregon in the narrow mountain on i5, which might get dangerous under fog and rain in winter. Recommend?

Yeah, it's "safe" if you want it to be. You will get to know the road like the back of your hand.
Not so you can hammer down faster... But so you know where the blind/hazard areas are. Always expect som one to loose it and come to a stop right in the middle of the road in front of you. IMO, don't drive faster than you can stop.

If you've ever been over the Smokies, or the Poconos, or over the summit from Salt lake to Denver you can do the route you mentioned. The other ones are much harder.

You guys aren't taking this driver seriously. My 2 cents. Take the job. You will learn the tricks but Shasta can be a real pucker in bad weather. Also it was I-5 had that fire shutdown. So it was a worthy question.

The road is fine. Just north of LA you gave the Grapevine hill it can get windy and has even snowed on it before. Like other post said in Northern CA you got Shasta to go over. They can put a chain law up on it in the winter sometimes.

Fog, rain, and steep grades are all part of being a Trucker. Not every route can be a Chicken Run. (400 or so miles of flatland)

Pretty area nice driving no problems in my book , unless you hit snow and ice in the mountains. Chicken coops are crazy in Oregon , the real communist state worse than communist California. Los Angeles might be more dangerous then the mountains. Ever hear of the Rodney King riots ??? Remember that truck driver pulled out of his truck and almost beaten to death ? Yes good idea to have a glock with you in your rig with plenty of ammo
