If your going to eat Fast prepared foods, then Subway is the best choice however i would stay away from the meatballs and other meats covered in cheese. Stick with the veggie subs and chicken. Cold cuts are knee deep in sodium.

The best method is to have a fridge and bring your own food.
MikeeeeCrossroads and Saddletramp1200 Thank this. -
I'm a team driver. I run the midnight to noon shift. My first rule of thumb is NOT to eat when I get on shift. I have snacks with one or two cups of coffee (and stop the coffee around 7-8 am). Eating very little during my shift helps keep me alert. I eat a banana, an apple, some dried figs, and some wheat thins during my shift. Enough to take the edge off the coffee.
After my shift I generally eat a tuna fish sandwich. If you are gluten intolerant I would recommend potato bread. It has and added advantage of not molding. I've had loaves of potato bread over 2-3 weeks that are still edible.Marksteven and AZS Thank this. -

Well, I don't have the trucking experience since I am only a student lol. But I do have the healthy diet experience and did alittle bodybuilding. Eat chicken (no KFC crap), turkey bacon, egg whites, leaner cut meats, healthy carbs like sweet potatoes, brown rice, and Ezekiel bread (this is the only bread that wont get you fat), cook with olive oil, most veggies and fruits are good for you but stay away from starchy fruits like bananas and grapes.
Follow this diet and you aint getting fat, but it's not cheap one. -
For the OP, the best thing to do will be to get a fridge in your truck, come up with a way of doing some sort of cooking in your truck, and stock up on stuff when you're on home time. Most grocery stores have some gluten free products. The larger the store or the bigger the chain, the more options they will probably have. Turn more towards meats, produce (potatoes are OK), and dairy (check labels on cheese, yogurt, etc).Marksteven Thanks this. -

"How to eat healthy out on the road?"
oxymoron :O Heck I used to eat healthy before I became a trucker! Now I pull up past the fuel aisle, grab whatever food is in the truck stop and run back out to keep rolling. Luckily I have always had a fast metabolism so I am still in good shape even though I eat garbage. -
I have a real fridge, microwave, & hot plate, & grill. I use the grill the most. Stores are easy to find. Cost you about an hour. Life don't have to be hard out here.
