No eggplant parmigiana I've ever eaten had meat

 

I think I've never been in a diner...

 

Ohhh... wait a minute... I found the eggplant parmigiana recipe online and it does take sugar... WHY?? Why in the world do folks here put sugar in everything they cook? Ok... so much with the eggplant parmigiana...

 

Look up another recipe? Look under organic or natural, or something like that.

 

Another night another Petro....Ive got to get of this big chain kick and start finding some mom and pop joints. Anyways this one is Carls Corner , Willies old place I believe. Apparently the storm the other day damaged the awning over the fuel pumps so they aren't selling any fuel right now....makes for an interesting parking ballet in the entrance.


Did however manage to find some nice rugs for the new truck at the Petro in Joplin, really spruces this place up I tell ya...and oh yeah WELCOME BACK ROCKS!

Yeah , I have a thing about staying in a truck stop to late . Lol

I try to wake up by about 7 p.m. and see what people are doing by then , and if looks bad I leave and go park at the farm or a on ramp somewhere. I am normally safer that way. Lol
The only thing about parking at a farm is that if I want a nap , sometimes they come out as soon as I get there and want to load me, and then I normally end up with a very long day.

 

I don't plan on making an eggplant parmigiana... Was trying to find out which ingredients are used... if I were to eat at a diner... I heard that sugar is added to most dishes in order to "improve" the taste... I avoid white sugar and don't like sweet food... Well... I better get ready to start cooking in the truck again...
