Now that I have solved my water pump issue, I would desperately like to have an accurate water temp gauge. There are two senders on the thermostat housing. I am told that the one on top is an OEM sensor and goes to the gauge, and that the one on the front bottom of the housing is the Cat one which goes to the ECM. We replaced the top sensor and the gauge and nothing changed (It reads about twenty degrees cooler, but varies). I believe the lower sensor is good because I have plugged a Scangauge into the ECM port and the water temp corresponds to the thermostats. Any ideas?

High resistance in the sensor wire to the gauge or poor ground on the t stat housing. It grounds through the mounting bolts and if they are excessivly corroded/ rusted if will read off.
