Use a temp gun to verify coolant temp in the surge tank. Sensor might be faulty. Then replace your thermostat. If you have a viscus fan, with the engine not running, turn it by hand, it should be stiff, but still able to turn it. Verify sensor reading on laptop compared to dash gauge, dash gauge might be wrong. After that, pull the water pump, check the blades, and replace if needed.

Just changed thermostat. This is what the old one looks like. Before we changed it, my mechanic test drove truck and it didn't go pass 185 on temp. Fan also was hard to turn so my assumption is that clutch is good. Will go test drive again.

Did you ever find out what was causing your problem. I have a similar problem with one of mine. Can't get it diagnosed.
