Say I wanted a speed bag and heavy bag, or just a speed bag, would this be possible to set up in a tractor. Has anyone tried before

I remember seeing a boxing bag in a freightliner century class condo several years ago. It was an owner operator who had anchored it with a special bracket attached a bar attached to each side of where the top bunk used to be. I want to remember this was at Honda out in California.

That's a lot. The sleeper area is pretty cramped even with one person. I carry a kettle bell and two 15 pound hand weights in the storage box. I have a workout routine to try and stay in shape. But a heavy bag and a speed bag would be hard to do.

You could haul around a heavy bag. But what are you going to suspend it from?

I doubt the fibreglass ceiling of the sleeper could hold up a regulation weight bag, and while you might be able to get a speed bag mounted... why? Get a kettle bell and a jump rope and go to a gym when you want more equipment.
