Kentucky is a large state. You didn't state from which city in KY you are leaving from. But, common wisdom says to go via I-40, being the shortest. Where you start dictates how you get to I-40 to start with.

Drop to I-40. From there your choice comes at Little Rock, either continue west on I-40 all the way to Barstow and catch I-15 down to San Bernardino; OR take I-30 to Dallas/FW then catch I-20 until it ends at I-10 west of Pecos. Take I-10 all the way to LA.

The southern route has no hills to speak of. The northern route has a few moderate hills, but I like it for the scenery. If you are concerned about fuel take the southern route. Check the MyRadar app with the wind layer active to see wind direction and speed, but note that either route can blow hard from any direction on any day.

Use Google Maps. It will show you at least 2 options with mileage and estimated travel times.

Across the continental divide I-10 gets up around 4500' IIRC, while I-40 gets around 7000' in New Mexico and again in Arizona. There's lots of hills to pull when you get to California. Even though it's longer, I-10 will go through less fuel. But wind direction can negate that.
