    Toss all the ingredients except for tomato paste in your electric pressure cooker and push the button and within an hour the meat should be tender and you can add the tomato paste to thicken it and you have nice gourmet meals for the next week.     I was sure I was the only trucker to cook curry in an instant pot. I made lamb curry on the beach in mexico using solar power from the top of my camper van.

    That said 8 teaspoons of cumin seems excessive

    6 lbs? What size pot are we talking here? The only one I've brought in my truck is a small one, I've got a big one at home which is fine, but it's not the largest either.

    I was wondering about those massive spice portions until I saw 6 lbs of lamb. I'm thinking a third of everything on the list might be more manageable.

    The meat comes out very tender as well. We curry about anything and have done traditional moose and souvlaki in our pot..We have a Starfrit that has a mode for browning the meat as well.
