Im sure you could find some YouTube videos. But nothing is going to replace time in the seat.

I learned on a 10 speed and the way my school taught it was by giving me a quick demonstration of how it worked and then sending me off to drive circles around the yard by myself until I got it. It worked, so as others said, you just have to actually practice with it.

100% of new manual truck students push the clutch too far, which engages the clutch brake and makes it harder to get into gear when shifting. Use no more than about 1/3 of the clutch to shift gears if you are moving. Press the clutch to the floor only when stopped to get into gear or only when you want the truck to change from going forward/reverse to the other direction.

As others have said the best way to learn is in the drivers seat. At my school we had a small yard we could do laps on in which you was constantly shifting while turning which I found to be helpful. Upshifting will probably come pretty easy if you've driven any manual car or truck before but try your best to form the habit of double clutching as soon as possible. If you find yourself grinding gears up shifting in the lower gears you may be starting in too low of gear. Most circumstances I usually took off from 3rd gear and if I started 2nd I was usually going to fast to shift into forth without skipping a gear going straight to 5th.

Try to form the habit of flipping your splitter up every time you shift to 5th and it'll become muscle memory.

Remember that 1/3 clutch when moving because the habit I had is if I grind a gear is to push the clutch in further when that is usually not the problem.

What helped me on downshifting was to brake first before pressing the clutch and let the RPM's fall to about 1000 you should hear the engine starve, clutch to neutral, rev up to about 1500, clutch to gear. My instructor tried to have me memorize the speed for the gear but I honestly went by the sound and I think that may be easier for someone familiar with driving a manual transmission.

When possible I try to downshift all the way down to 6th before coming to a complete stop. Once stopped I just flip the splitter down and shift to 3rd to be ready for take off. Also keep in mind that you need to flip that splitter down before shifting into the lower gear you want. If you shift to the gear and then flip the splitter down your still in the high gear.

At my school I felt like students was too quick to give up on driving the manual truck and would get discouraged and go to auto. While most of the new fleet trucks are all 100% autos these days I feel like the ability to drive the manual makes you a better driver.
