    Yeah, Rich t, I noticed he is home everyday, but, he also said Peanut butter/jelly isn't cutting it, so that means he is not really into preparing anything good or nutritional, just something easy and quick. So why not just stop at Burger King and fill up......fast and greasy and easy, the American way ! right?

    here's my shot at it

    make a mustard vinaigrette.......
    mix together 2 teaspoons dijon mustard
    1 tablespoon balsamic vinegar
    3 tablespoons olive oil
    2 tablespoons chopped fresh basil or parsley
    set aside,

    in a bowl mix
    a cup of cherry tomatoes, cut in half
    1 cup of rinsed, great northern white beans
    1 can light tuna, packed in oil, drained
    1/4 cup pitted, sliced kalamata olives
    1 sliced shallot or 1/4 of a small onion

    1/4 to 1/2 a french baguette, cut into cubes.

    to pack it for the road....
    put the vinaigrette in one of those little round glad containers

    pack the salad part in another bigger one. pack the bread cubes in a baggie. when you're ready to eat, throw the bread cubes in with the salad, toss in the vinaigrette and you're good to go.

    it has good sources of protein and fiber, and not too many carbs to make you drowsy. ;)

    sliced meatloaf on bread
    left over turkey sandwiches (like at Thanksgiving ... yumm yumm)
    left over pizza - always good cold and left over the next day
    pre made sandwiches from Wally world are good and reasonable and huge!
    how about Subway ... $5 for 12 in. sandwich

    I gotta agree with ya on that.. a side of onion rings with the zesty sauce can't be beat either.

    Years ago running OTR I would run a 12Volt crock-pot and lunch-box stove ( http://www.google.com/products?q=12+volt+lunch+box+stove&hl=en&scoring=p http://www.google.com/products?q=12+volt+crock+pot&hl=en&aq=f )

    As for a recipes:

    Ham Stew

    1 can french cut green beans (undrained)
    1 can diced potatoes (drained)
    1 small can mushrooms pieces and stems (drained)
    1 small can Hormel ham (undrained and chopped up)

    Combine ingredients (do not drain beans) in a small oven bag
    Tie shut bag, place in aluminum pan and place in lunchbox stove
    Cook 35-45 minutes, remove and open carefully, there could be steam.
    If you don't like mushrooms, feel free to leave them out, they are not required.

    Creamy turkey alfredo

    Put 1/2 water in the bottom of the lunchbox cooker, use an aluminum pan and put your ingredients into a baking bag, like they use for baking chickens and turkeys.
    1 jar alfredo sauce
    1 can mushrooms drained
    2 cups rotini pasta
    1 cup smoked chicken or turkey cut up in chunks
    Mix all ingredients in baking bag
    put into aluminum pan
    put 4 small slits in top of baking bag
    bake in cooker for 2 to 3 hours until pasta is done

    Check once or twice to make sure there is still water in the bottom of the cooker. Be careful because the steam can burn you. You can substitute the alfredo sauce with marinera sauce.

    Seafood & Rice

    1 box of spanish rice
    1/4 pound of scallops
    1/4 pound of shrimp
    1/4 pound of hot It. sausage
    Use the amount of water it says to on the box of rice.
    takes about and hour to cook..

    You can eat good with a little imagination.
