You don't know what you're missing! Sometimes it's good with a slice of onion right under the salmon.:biggrin_255:

Finding good bagels is the challenge.

Thank you to everyone who has inputted; i will evaluate all the info when there is time, probably this weeekend and please continue to give suggestions.

Right now my recent diet includes redbull, water, gatorade, McD's bigmac/double quarter pounder, sometimes with fries, coke, homemade tuna+ macoroni (not filling)

M+M's, oreo's, peperage farms milano cookees , cheetoz

(i'm loosing my ability to spell for some reason, could it be the diet)

This is actually a very time-consuming schedule that i run. The after-hours scheduling does not help either as most grocery stores are closed at this hour.

I can't believe no one mentioned the all time favorites, Vienna Sausage and Ritz Crackers. Or my favorite Sardines in Louisiana hot sauce and Ritz Crackers. Everything goes good with a Ritz. :smt049

1 lb. pkg oscar meyer center cut bacon
a head of boston bibb lettuce
    tomato
mayo either bring a bottle of the squeezable, or start stealing the individual pack from the fast food joints.
    toast

toast 2 slices bread, lay out to cool completely

cut the bacon in half ( easiest way is to freeze for 10 min, then cut)
pull off how many half strips you want for a sandwich, then portion out the rest into little snack size baggies. put all the little baggies into a quart freezer bag. bacon is only good for a week or so thawed so you don't want to waste it.

line a sided sheet pan with aluminum foil (makes for no cleanup)
lay out the bacon on the pan, put it in the oven, THEN turn it on 350.

while the bacon is cooking, pack up the lettuce in a plastic container, along with the tomato. cut up half a cucumber and put that in a seperate container. check the bacon in 5 to 10 minutes and pull out when it's done to your likeness. drain on paper towels. pack that in a baggie and put on top of the lettuce in the container. once the toast is completely cool, wrap in alminum foil.

use the extra tomato, lettuce with the cucumber for a small side salad with your sandwich. bring along some dressing.

OK you are home every day, so that means (probably) you are only eating ONE meal a day in your truck. Sounds to me no different than anybody else who packs a "lunch."

You say your sandwiches are "not cutting it," and I don't find that at all hard to believe if you don't vary what you put in them a bit. There really IS LIFE AFTER BOLOGNA! :biggrin_25525:

I actually liked to take my own sandwiches to work. But I always made sure to vary what I had in them. Turkey some days, ham some days, roast beef some days, PB&J some days. I usually had a couple of sandwiches, and would often have two different kinds in the same lunch. Having a sliced dill pickle and some chips adds a bit with them.

I really do recommend staying away from the "prepared lunch meat." Buy a Cure 81 Ham and thin slice it. Slice the whole thing and vacuum pack what you don't use, then freeze it. Same thing for roast beef or turkey. I used to buy the turkey breast and slice it the same way.

When you get ready for work, make your sandwiches with the frozen meat, and they will be thawed out by the time you are ready to eat them.

Get a wide mouth thermos and take along some of your favorite soup, or again, vary the kind of soup you put in it.

Take some type of fruit with you. Fresh fruit is great in season. In off season, there is nothing wrong with canned fruit. You can take a plastic spoon, and eat the fruit right out of the can.

Want a bit of a snack once in a while? Take some home baked cookies with you.

There are literally thousands of things you can do with your "lunch" to make it more enjoyable, instead of that boring SAME OLD SAME OLD day after day!

Anything you can throw in a crockpot before you leave for the night will work really well. That way, you have a hot meal ready when you get home, and you can put the extra in a microwavable dish, to be eaten cold, or reheated, on the truck.

I also make home-made beef jerky, when we are home. Put it in a ziploc, and put it in the freezer on the truck, and pull out as much as I want on any given day.
