Need Ideas for a good electric grill for cooking while on the truck?

I've always wanted to get a little treager pellet smoker and mount it on the deck plate. Havent done it yet, come spring thats my plan.

I have a single burner electric induction cooktop. Nice and fast.
But I had to upgrade to a pure sine wave inverter for it to function.

This is the one to have I think. Small and looks built well.

 

Walmart has a small Foreman type grill for $10. That is what I use.
They last a long time, but for $10 they are easy to replace when needed.

 

Has anyone messed around with having an Air Fryer Oven in the sleeper area? I understand you can make mean fried chicken in that bad boy (less oil but still a crunchy outer texture)
