Okay from looking around on Amazon, I can get a coleman 12V fridge for about $100 and a $30 12V food warmer/cooker so I guess I don't really need an inverter.

For the 12volt cooker, use an aluminum/tin insert (like one used for baking banana bread). Fill the cooker 1/4 full of water, place your food into tin insert and on top water in cooker. You will be steam-cooking food this way, and won’t burn food onto bottom of cooker. I’m sure others will give many other ways to cook healthy food.Lepton1 Thanks this.

Not so much now that its winter but you can leave cans of soup on the dashboard during sunny days and it will heat to steaming hot. Just leave it up there before your nap, then wake up and enjoy.

Thanks. Also read that in one of the reviews on Amazon. I have an instapot and was excited to use it in the truck until i saw it needs 1000 watts. So the 12v cooker will be a great substitute.
