Lots of off the main drag places to park in that area too if you don't care about access to bathrooms and food. Many of my multi-stop runs out to TX have a stop at Diamond Foods just on the other side of the causeway from that Walmart. I'm usually in & out at o-dark-thirty so park on the street a half block away. I park on Boyce Rd. If you don't go too far down, you can circle the block onto St. George and come back out on Jefferson at a light to make the left turn back to the causeway. It's a rough industrial area with nothing to see, but never been bothered there.

 

Sysco is right around the corner too, in case you didn't have time to do something better like perform surgery on yourself.
