From reading what a lot of people have stated having problems on this site in regards to unemployment, it seems to differ from company to company on what they allow and what hassle they'll give you.
I was disabled for three years without working before I started driving. I never filed for state disability pay so I had in reality absolutely nothing proving I was disabled other than trying to have doctors vouch for me. My company never even asked for a release to work let alone asking for any paperwork for disability or asking for a letter from a doctor or anything. Zero problems.
Then you have situations like transam pete said where they wanted a letter from an accountant for self employment, or other cases just tax documents. For no employment, I've seen people say companies wanted letters from people they knew stating they weren't working, pretty much trying to make sure you weren't in jail/prison or a drug dealer or something.
I guess my point is some places will hassle you, some might not bother even talking with you and others just won't care. If you keep on trying you should be able to find something though. Might not be flatbed, but something at least.

Because of the political climate we live in companies have to verify where you have been for the last ten years. They have to make sure you did not spend those three years unemployed studying in Yemen. What keeps folks from being hired is that it is hard to prove where you were when you were unemployed.
Believe me, you are not going through anything that someone else hasn't already been through. We were all young once. -
