I'm 6'1". Plenty of room.
-
I'm 6'4" and have plenty of room even with a shelf I built for my TV coming up at my feet.

Sizes vary from truck to truck. You shouldn't have a problem though.
-
Truck is 8' wide. Mattress just a bit shorter. Actually, mattress maybe 72", then storage area, so tall guys feet can hang over.
-
Length will definitely not be a problem. I'm 6'3" and had more than a foot to spare, actually close to two feet. Truck is 8' 6" wide with interior space being about 8'2".
Depending on the size of your sleeper and bunk width could be a bit of an issue. I've slept in 4 trucks that we're very comfortable and roomy but I did have one truck that had a narrower bunk which didn't allow me to roll over to my other side without waking up to "rotate".
Most bunks are around 40-44" wide. If you get one that's 36" that is likely to disturb your sleep if you need to adjust your position in mid-sleep. -
You'll be curled up in the fetal postition trying to find a happy place anyway.
