You can change business form after the fact, but that's a process itself and will add time to what you're doing anyway. It would be an unnecessary complication IMO.
I've done it for a different reason, it's not a high risk thing. There are dependencies that complicate it, such as changing your insurance to the new entity and reissuing certificates for example. It's more complicated than meets the eye, but not impossible. In the scenario you describe, I expect the effort to outweigh any benefits you think you're getting.
