You actually have to buy your packaging stickers from the usda, which lists where it was cut, if you use a different one You need different stickers

after 30 months you can’t cut the bone so all you really get is burger

 

That's the first I've heard of any of that. Sounds like a pipe dream to me.
We do our own killing here on the ranch. A guy in town does the cutting and wrapping. He has a regular butcher shop and cold storage and he's been in business through three generations.
The only thing stamped on the packages is the contents...steak, roast, hamburger etc...and the notice Not for retail sale.
Where are you located and what's your source for what you claim?

That law is for the white people. Where we live a different set of rules apply. I don't know how we survived all these years of being responsible for our own actions without a bunch of marginally qualified people in long white coats and silly little paper hats with serious expressions and carrying clipboards watching our every move.
We sell quarters and halves to friends and family and it doesn't get stamped for anything except contents.
They tried to cite us several years ago. They didn't get very far.

 

Massachusetts, the slaughter houses we use in NY and CT have their own sets, but We do resell out of a local farm stand

 

Cool. People asked what the regs are. The regs are if you’re not supplying the animal and a processor wants to sell packaged meat then it has to be USDA certified. I don’t really care what you do. Sort of like someone asking about hours of service and someone else coming along saying don’t run a log book. That’s cool and all, doesn’t change the actual regulation.

My old hometown in South Dakota had a Schwann’s depot where they’d unload their semis, store product, and load out 4-5 of their delivery trucks. They pulled out and the depot was for sale a few years ago. Me and two others looked into buying the building because it was basically a huge freezer and running a processing plant out of it. Long story short if you know for sure that the business can 100% survive on locals bringing their animals in then getting the ball rolling isn’t that bad. But it’s an insane amount of money and paperwork and headache if you want to sell your own brand of packaged beef. The potential for that paying off big was there but not enough for us to dump a bunch of money in and hoping to make it on local business while hunting down outlets to commercially sell packaged beef and pork.
