How safe is it to leave personal items in the cab of your truck? Also how safe are you sleeping in there? Any tips to stay safer?

It is not different than leaving personal items in your car. Just be sure to lock the truck at all times, whether you are in it or not.
An additional factor for truckers is that the companies maintenance people have access to your truck when you are not in it. Hopefully you can trust these people.
Truck locks are much better now than they were 15 years ago. I can remember being able to get into any international cabover I wanted to by simply pulling on the door handle and hitting the area below it a few times. Worked on a few other trucks as well. I learned this from another driver when I locked myself out.
AS for staying safe in the truck, as long as it is locked up, you have little to worry about. I keep something handy to protect myself should someone try to bust in, but I don't worry about it much. A key here is learning to park in the safest locations possible. -
Keep the doors locked, and at night run the seat belt thru the door handles then lock them in. So even if someone unlocks the door, or uses a slim jim they will literally have to break the window and cut the seat belt.

Sleep safer and carry a big mean german shepard in the bunk.
