Is double clutching a standard policy for most trucking companies? I am currently at a trucking school with an instructor that is trying to teach me float shifting is standard and double clutching is nothing but trouble.

Most schools teach double clutching that I'm aware of. I've never heard of one that prefers floating over DC'ing.

Most companies like to see you are able to double shift but they know once your cut loose on your own it's up to each driver to chose what they want to do. When I got hired with the company I am at (as for any company) you will have someone ride with you for 1 day just to make sure you can drive. As our safety director told me. "let me see you do it 1 time" did it and "good enough" . I do both from time to time.

A lot of companies prefer you to float... done properly, it saves a lot of wear and tear on the clutch... but it IS good to ask, and to be proficient in both techniques...

By law I think schools are required to train to double clutch.I still when I come to a stop.Otherwise I float.

I know that FL DMV requires DC'ing throughout the road skills test... can't speak for other states, just mine. -

NC requires you to double clutch during the entire road test.
I always thought the CDL schools had to teach it. -
In Indiana if you miss even one double shift you fail. Ohio requires gou double shift for test too. Just took mine last week.
