Your license number is also there, along with your birth date. Who knows if they burn a copy or store the image, or for how long, or if they protect the information they collect or toss it in a dumpster? SSNs are obtainable, and a full name, current address, DL number and DOB make it easier.
Shipper asking for a copy of your license?

The security guard at Coca Cola in Philadelphia will keep your license until you leave and return the visitor permit.

Tyson in Council Bluffs does the same thing, holds your DL till you leave.

I moved a lot of very high value stuff (escorted with a schedule) and they took pictures of everything.
Back to the OP's question, I am hesitant to give up my license other than to copy my name and address, a bunch of places have done that but when it came to copying it, a place that FedEx CC/SC dealt with did exactly that for security reasons. Even at some navy bases I've been to, they looked at it and that was it. -
Any cop can do the same and we have read plenty of stories of crooked ones. Anyone you have presented to in the past can too. The question is the trust issue. I highly doubt someone would keep their job long if identity theft was originating from a business.
You never bought beer or cigarettes and had to show ID? Some have cameras pointing right at the check out counter. I believe I would be a little more worried about that.
This stuff didn't start yesterday. If it did it would be all over the media yet there is not one story out there. It's smart to protect your info but IMO there is nothing to worry about at a shipper.
Look at it from the other side and the company wondering whether they can trust this nasty looking driver in sweat pants and haven't shaven in a week with $200,000 in freight.
You can find all the info on the internet on many. You don't need training and experience to work your way into a shipping office to set up shop. -
Too many other things to worry about, IMO.
I leave my license momentarily if asked, like yesterday when I had to move the loaded trailer from a fuel chain shop before the repairs had been paid for. Some will take your fuel card instead, but it had been a long day and I don't get testy when I'm just plain tired. A few check my license before loading or unloading, it's also to do with the ISO certification stuff, to be certified, they are demanding we be ID'd .
One place settled for a faxed copy from safety when my license had been misplaced, another place we go all of the time in New Jersey will take a copy if they don't remember you, but skip it on subsequent trips if they are often.
It's kind of like being searched and having your truck searched before going into a secured area, you do what you have to.
I understand the reluctance to comply but we're pretty much violated long before someone asks to copy your CDL. again, IMO. -

Kmart used to do this with all inbound loads, they would take your license and input it into the computer. I let them do it once, since then, I hold it in my hand while the Guard writes down my name and license number. We haul bean loads all the time, they used to ask for our Company info, DL number and signature at all the places. Now, most of them just have us sign, they already have our DL in the system to match up. Last several times I've been on military bases they've taken my license and either made copies or held on to it at the gate. This is just another way they are attempting to thwart cargo theft, personally, I'd be more concerned about the driver who refused to let them take a picture of it than I would of them taking it.
Yes, regularly, especially with recycling loads have pics taken once loaded. The same with taking a picture of the seal once it's applied. -
