if your company will let you have an inverter, that is the way to go for sure. my fridge has saved me so much money. i spend about 65 bucks a week on food for the truck, and that includes the diet pepsi/dr pepper and bottle water. i take my tractor home, so i have a 50 foot drop cord that i leave outside so when i am home i plug the fridge in so it is always cold. plus, i never have to take anything out of it either. great investment. the ability to have fruit and not worry about them rotting is wonderful. bananas, grapes, oranges and apples...
for those wondering, i have a GE 3 cubic foot dorm fridge with an actual freezer and a cobra 875 watt, 1600 peak inverter. found the microwave i need for 42 bucks at wallyworld, and im picking that up tomorrow. 700 watt so that will do just fine. i will have to unplug the fridge to use it, but that is no big deal. that inverter might run them both, but seeing how i only have a 150 amp fuse inline, i dont want to push the issue. that s.o.b. was 25 bucks alone.

Yep, dispatchers only see dollar signs. They get bonuses on how many miles their drivers run and what their on time percentage is. That's why your FM will push you hard. I did it for my last company and it almost burned me out.
Get you a microwave. A refrigerator - not one of those thermoelectric SOB's from the TA. These are really nice:

If you do it that way you got more than enough room to keep good stuff for long periods of time.
Also get you a crockpot. You can get a small bungee cord and secure the lid and also tie it down so it doesn't fly anywhere. Great for slow cooking you a meal while you run your load out. When you pull in to park for the night presto! Dinner is done!
It also does help if on your reset if you make daily portions of meals and seal them in tupperware or the likes. I use the ziplock brand containers with the snap tight lids. You can easily put those in the fridge or freezer and warm them up in the microwave.
Make sure you keep a healthy stock of canned food too.

This is what usually goes out on the road with me aside from appliances. Keep in mind I like to buy food 2-3 weeks in advance.
- 3 Loafs of bread
- Mayo, ketchup, mustard
- assortment of lunch meats
- 4-5 boxes of cereal
- 2 half gallons of milk (fits in fridge better)
- assortment of coffee, soda, gatoraide, 2 large cases of water
- snack cakes
- misc canned food (atleast 30 cans with half being fruit)
- fresh fruit
- ice cream (for the summer months)
- 1lb of lean ground beef
- hot dogs
- cheese (sliced and shredded)
- few cases of ramen noodle cups
- 10 1 gallon jugs of water (for soup and washing dishes)
- hot cereal for breakfast
- Ribeye (when I am feeling rich)
That is a general list of what I have in the truck at all times. Also I like to carry a small BBQ grill with me for resets. I carry that much stuff because I live my life out on the road and once I start rolling I don't want to stop for groceries. If you won't be out for months on end you probably won't need near as many things. I just like to be prepared.

I was spending 20 bucks a day as a local driver on food, We work between 12 to however many hours a day and stopping at gas stations, fast food, and diners can add up FAST.
I went and bought a lunchbox cooler from the pilot that way I don't have to worry about ice packs and what not. I'm done spending 20 bucks a day to eat! -

i keep a coffee maker in the truck also, better than drinking that rot gut coffee all burnt to battery acid at the truck stops, I buy beans at world market, grind it myself and keep it in a container, thats when you get good coffee. once in a while treat myself to starbucks for a espresso when I can fit the truck in the drive thru.

I just bought a Keurig coffee maker around Thanksgiving...I really hate to leave it behind, so I'm hoping that whatever I wind up in is allowed to have a nice sized power inverter to power my 'necessary electronics'.
