"But what you're really missing the point is YOU have to DO all the work that the office staff at a trucking company does for you. and/or hire someone to do it."
What makes you think that I am missing that? I have been a successful award winning programmer so I can develop my own software to track every penny. I already created a script that I never released publicly that automatically categories every single penny I spend without me having to do anything. At tax time I just print out the results and I am done. I can easily do the same with trucking. I also considered hiring someone to get me the loads. I do not drive for the money but for the adventure. I used to spend thousands of dollars to visit certain places that I get to go for free now.
Simple curious questions that most O/O should know please

It is simply a business that you get out of it what you put into it.
As with any business, maximize revenue, minimize expense. And to minimize expense, don't turn the wheels. Manage you fixed expenses to get them as low as possible. The generally getting short runs, not big runs.
But what do I know, I'm just a trained monkey...... -
I charge 10% plus a dollar an auto, and do all the back office work including billing and collections. So it is not hard over all for me to get 10% more for a run when I call a broker/dealer who knows my voice. I am sure that you too can do that since you have years of experiance. But these new guys just starting out don't have a clue it a trip is paying high or low and might not even ask for more money. Nor will they have the relationship with brokers that you and I have built.
And from my side, I fight to get ever freakin dollar possible as that is how I get paid. No flat rate "Gary" rates. If the driver is not rolling, I don't get paid. So my job is to keep them rolling at as much money as possible so I can make as much as possible. And while all but one of my dispatch service guys is kicked back at the house this morning, I am doing billing and other paper work for them. That freedom has some value to most drivers.
